Processing

Selection of the herbs, devoting special attention to the most epresentative Galician herbs such as fennel, coriander, eucalyptus and laurel among others. This special selection is used for the infusion, through a maceration process in a hydroalcoholic base for approximately 2 months.

The herbs are pressed by wich the infusion is obtained. Then, we proceed to the mixture of the infusion and the wine (our Albariño Valmiñor elaborated on a regular basis) in the right proportion along with the sugar. Subsequent correction of alcohol content at 15%. Filtering and bottling.

Tasting

Entroido is a straw yellow color vermouth, evoking the color of Valmiñor Albariño, the basis of Entroido, with golden reflections of a certain intensity. Lively and transparent.
It shows a citrus nose with very marked notes of orange and lemon and also very floral, all wrapped
with a nice spicy touch. Specially noteworthy are the notes of fennel, laurel and coriander, flowers like roses and balsamic notes such as mint and eucalyptus. It also shows species like cinnamon. Entroido is complex, intense and elegant with an Atlantic and fresh mouth… evoking our Galician mountains. It is unctuous, with a very pleasant, rounded and citric acidity.

Elaboración

Selección de las hierbas prestando especial atención a las más representativas de Galicia como son el hinojo, cilantro, eucalipto y el laurel entre otras. Infusión de las mismas mediante un proceso de maceración en una base hidroalcohólica durante 2 meses aproximadamente.
Prensado de las hierbas proceso mediante el cual se obtiene la infusión. Por otro lado utilizamos nuestro vino Albariño Valmiñor elaborado de forma habitual. Se procede a la mezcla de la infusión y el vino en la proporción diseñada junto con el azúcar. Posterior corrección de la graduación alcohólica a 15º.

Cata

Entroido es de color amarillo pajizo evocando el color del albariño Valmiñor que constituye su base, además, presenta reflejos dorados de cierta intensidad. Es brillante y transparente.
Muestra una nariz cítrica con notas muy marcadas de naranja y limón y también muy floral todo ello envuelto con unos agradables toques especiados. Se hacen especialmente destacables las notas a hinojo, laurel y cilantro, a flores como rosas y a balsámicos como menta y eucalipto. También muestra especies como la canela.
Entroido es complejo, intenso y elegante con una boca atlántica, fresca y que evoca el monte gallego. Es igualmente untuoso, y con una acidez muy agradable, envolvente y cítrica.
