Elaboration
The Tempranillo grapes used in Ébano 6 come mainly from our trellised vineyards. The grapes are sorted on a sorting table at the winery, then crushed and destemmed before being transferred to stainless steel tanks. Daily pumping over with aeration during maceration and alcoholic fermentation at a controlled temperature (24–25°C) for approximately 12–14 days.
Racking and malolactic fermentation in stainless steel. Aged for 6 months in French oak Bordeaux barrels. Bottled and then aged in the bottle for a minimum of 2 months prior to distribution.
Tasting
Intense purple-red color with a violet rim. On the nose, it reveals aromas of strawberry and wild blackberry jam, red currant, blueberry, and licorice. Accompanied by spicy notes of dill, black pepper, and cinnamon. Balsamic, vanilla, a fresh and smooth minty note, toasted cocoa, and toffee. Notes of ripe fruit, compote, and cherry. Enormous on the palate, with ripe, enveloping tannins and good smoothness. Well-structured, powerful, harmonious, and warm, with a glyceric texture and a long finish…
