Vineyard
The three varieties used for the elaboration of Davila come exclusively from vineyards located in O Rosal area. Pergola and trellis conducting system. They are at least 40 years old. Sand and alluvial deposit soils, with a great presence of river stones.
The production is limited thanks to the pruning – 8.000 kg/ha of Albariño and Treixadura and 6.000kg/ha of Loureiro. The space between vines is made of natural vegetative cover formed by indigenous species like ray-grass and white clover. Harvest takes place around mid-September.
Elaboration
Pre-selection and grape analysis from the vineyards. Sorting table in the winery before destemming. Cold maceration (10ºC) during 6-8 hours. Pressing.Settling of the juice by flotation in stainless steel tanks. Alcoholic fermentation (each grape variety separately) under an automatic temperature control. Ageing on the lees for the albariño and loureiro grapes in stainless steel. Stabilization. Filtering through a tangential filter and bottling. Resting in the bottle for sixty days prior to distribution.
Tasting
Davila shows bright straw yellow color with green reflections. Varietal aromas on the nose, fragrant, citric (lemon and mandarín aromas), floral notes such as rose, and herbs like chamomile, and laurel leaf. The wine shows pleasant balsamic notes. The mouth is fresh, elegant, with good structure and wellmarked acidity. lt is tasty, fullbodied wine, and very floral, showing a complex and elegant
finish, with citrus notes and soft bittemess.
